Nice so hard to find veal anywhere
Good veal is from the male calves in dairy production - so the season should be about right now. You can see too that they took a leg and just sawed it into 6 pieces - so all from the same calf.

I swear - my meat guy is the best.

Do yourself a favor and get one of these kits. They come from China, but make the Ooni how it should have been from day 1. OONi Pizza Oven Turn Table or Rotating Plate Fyra Koda Karu UUNi 3 (allchinas.com) he has a FB page.

They look pretty good, but can see where you have left it a touch long before turning :-)


Sweet, I’ll check that out.

It’s a balance that I need to get right and will over my next couple of cooks, heat was easy to maintain with charcoal and hardwood but I wasn’t confident leaving the front panel attached in order to keep my eye on it.
 
Yep, you've almost got to under-estimate it. You think 5secs is too short for a turn, but it isn't. You just get a rhythm going, 5 secs, quarter turn, 5 secs quarter turn. Just go under on one side of the pizza and pull it back. That way you can get it out before any burns happen - the Ooni is so hot, that if you leave it for literally 5secs too long, it burns.
