The oldest known cooking recipe of mankind is for beer.. It’s a fact, look it up. Fuckin disgrace that stupid politicians rape us all for the pleasure of it.

Sorry, I missed your post until @ASSASSIN replied to it. It is actually ale not beer you are talking about. Ale is unhopped and is centuries old, beer is hopped and is a much more recent invention. These days the terms are used almost interchangeably, probably because the marketeers think ale sounds more upmarket, but they are not quite the same.

If you don't like paying the tax - make your own! I will be happy to advise you on how to make the good stuff.

On behalf of my ancestors, you're welcome!
The British invented beer (actually ale). They also invented the footy, cricket, soccer, rugby union. We've got a lot to thank the poms for. Your lot were more into narcotics and hallucinogens - assassin = hashhashin!

Come on bro, the poms didn't invent beer....

It started in Mesopotamia over 6000 years ago. Plus they even found they wrote a song about beer lol

Didn't hit Europe till about 5000 years ago

OK you win. I don't think we actually had poms 5000 years ago.

I did hear a story that the poms (specifically the British army) invented curry in India to stop the meat from going off, and to mask the off flavour if it actually had gone off. It might be an urban legend.

Exactly. And as per my original link, here is the poem
A Hymn to Ninkasi
Borne by the flowing water […J,
Tenderly cared for by Ninhursag,
Ninkasi, borne by the flowing water I…J
Tenderly cared for by Ninhursog.

Having founded your town by the sacred lake,
She finished its great walls for you,
Ninkasi, having founded your town by the sacred lake,
She finished its great walls for you.

Your father is Enki the lord Nudimmud,
Your mother is Ninti, the queen of the abzu.
Ninkasi, your father is Enki, the lord Nudimmud,
Your mother is Ninti, the queen of the abzu.

You are the one who handles dough
[and] with a big shovel,
Mixing in a pit, the bappir with sweet aromatics.
Ninkosi, you ore the one who handles dough
[and]…with a big shovel,

Mixing, in a pit, the bappir with [date]-honey.
You are the one who bakes the bappir in the big oven,
Puts in order the piles of hulled grain.
Ninkasi, you are the one who bakes the bappir in the big oven,

Puts in order the piles of hulled grain.
You are the one who waters the malt set on the ground,
The noble dogs keep away even the potentates.
Ninkasi, you are the one who waters the malt set on the ground,

The noble dogs keep away even the potentates.
You are the one who soaks the malt in a jar,
The waves rise, the waves fall.
Ninkasi, you are the one who soaks the malt in a jar,

The waves rise, the waves fall.
You are the one who spreads the cooked mash on
large reed mots,
Coolness overcomes…
Ninkasi, you are the one who spreads the cooked mash
on large reed mats,
Coolness overcome,
You are the one who holds with both hands the great sweetwort,
Brewing [it] with honey [and] wine…
The fermenting vat, which makes a pleasant sound,
You plate appropriately on [top of] a large collector vat.
Ninkasi, the fermenting vat, which makes a pleasant sound,
You place appropriately on [top of] a large collector vat.

When you pour out the filtered beer of the collector vat,
It is [like] the onrush of the Tigris and the Euphrates.
Ninkasi, you are the one who pours out the filtered beer of the collector vat,
It is [like] the onrush of the Tigris and the Euphrates.

The gokkul vat, the gokkul vat,
The gokkUl vat, the lam-så-re vat,
The gakkul vat, which makes the liver happy,
The lam-sire vat, which rejoices the heart,

The ugur•bal jar, a fitting thing in the house
The so-gub jar, which is filled with beer,
The am-am jar, which carries the beer of the lam-sire vat.„
The beautiful vessels, are ready on [their] pot stands!

May the heart of your god be well disposed towards you/
Let the eye of the gokkuI vat be our eye,
Let the heart of the gakkul vat be our heart!
What makes your heart feel wonderful,

Makes [also] our heart feel wonderful.
Our liver is happy, our heart is joyful.
You poured a libation over the brick of destiny,
You placed the foundations in peace [and) prosperity,

May Ninkasi live together with you!
Let her pour for you beer [and] wine,
Let [the pouring] of the sweet liquor resound pleasantly for you!
In the…reed buckets there is sweet beer,

I will make cupbearers, boys, [and] brewers stand by,
While I circle around the abundance of beer,
While I feel wonderful, I feel wonderful,
Drinking beer, in a blissful mood,

Drinking liquor, feeling exhilarated,
With joy in the heart [and] a happy liver—
While my heart full of joy,

[And] [my] happy liver I cover with a garment fit for a queen!
The heart of Inanna is happy again,
The heart of the queen of heaven is happy again!

It's nice to see this small corner of the Kennel taking a break from bashing referees and opposition players and turning in a gentler, more whimsical direction, however briefly it might be for.

My all time favorite poem (even Philistines can enjoy poetry if it's good stuff) is the Rubaiyat of Omar Khayyam, translated and put into verse in 1859 by Edward (later Sir Edward) FitzGerald. The link is above. For those members who have never come across it before - prepare for a treat!

It isn't about beer but wine, and the author's love for his subject matter shines through in almost every verse. Curiously, Omar Khayyam was a Persian (12th century), My understanding, such as it is, is that most Persians (Iranians) were Muslims and didn't approve of booze. This one was an outlier.

@CroydonDog Spotted a random Happy Valley beer at my local bar. Didn't know what it was but ordered it. Not the description I was expecting, but none the less, it was actually not too bad. But one was enough.

Time for an update on my cider adventures.

I have made, bottled and drunk half a dozen batches of my cider recipe (refer back a couple of pages), and decided it was time I had a whack at draught cider. I bought a 5 litre pressurized dispensing gizmo ($95 from Vevor) and brewed a new batch to put into it. How was it? It was TERRIBLE! It tasted really strongly of yeast and it was cloudy.

After I recovered and regrouped from my initial disappointment, I realized what I had done wrong. There is an internal pipe that extends right to the bottom of the vessel (you can't see it in the picture, take my word for it), and so the yeast gets sucked up into your glass even before the cider does.

I brewed another batch and left it for 5 days after all fermentation had apparently ceased, before racking it off into another vessel, leaving the obvious yeast behind. I added the clearing materials = this time chitosan followed by colloidal silica - and left it another 5 days to clear. I then had a liquid that looked like yellow-brown gin (I almost used another description) and a well defined layer of yeast. I racked it off into the dispensing vessel, and added sweetener, before sealing and pressurizing it. This time it tasted fine. Clearly, if you use the Vevor device instead of bottles, you need to get every molecule of yeast out before you add it to the container.

I wonder how much rat and cockroach piss, shit and vomit the average Aussie consumes in a year?

@Roll the Bones , did you know there was a brewery in Scarborough? Me neither. I had a 4 pack of this whilst watching an episode of Lincoln Lawyer this evening. Went down pretty easy.

I've also discovered a great independent chain of bottlos called Black Sheep which stock some local stuff and seem knowledgeable. I just happened to be close to their Hendra branch today.

Have a great weekend all.

Yeah I did know about Scarborough Brewing, but haven't managed to make it out there yet, or try any of their stuff. Hopefully soon. I had a sneaky beer this arvo at Hoppers Brewing at Albion. Not too bad. There's a couple new ones at Brendale to check out soon.

I live a few hundred metres from Black Sheep at Everton Hills. It's a good store, and as you say, pretty cool staff and they normally have a good range of stuff. The one at Newmarket is worth checking out.
