I'm intrigued by the Polynesian ovens, like the umu and hangi, but never experienced them.

I've been invited to a traditional Fijian Lovo dinner. I might giver it a go.

Best line I've ever heard on this subject is " you cant win friends with salad"!! I'll dig on cow everyday of the week. It wins overall, however there is nothing wrong with any of the others and I will gladly devour any of them. I see myself as the anti-Noah "I'll take two of every animal thank you and a nice bottle of Shiraz to wash them down."

A Kiwi showed me how to make a beer keg hangi ( im aware hangi means ground oven or something ). Was fukking great and easy to make

Sweet. Gotta try it one day.
You will need
1. Beer keg .( borrow one from back of pub )
2. Angle grinder
3. Wire mesh to make a basket.
4.some rocks, banana leaves , water
5. Ring burner from bunnings about $15
6. Couple of brick to prop keg up from flame.

Grab your grinder start cutting round the circle a bit over half way Remember there is still beer and pressure in the kegs. You will learn that once the grinder pierces the keg lol is scares tbe fukk out of you but its fun.
Once cut the rod in the keg will fall out cover the hole with foil the top part is your lid.
Put rocks in heat the **** up make a basket wrap your meat in banana leaves job done.
Im not claiming this is authentic but taste shit hot

Not to be biased but the umu is much nicer than the hangi! The umu is generally not buried underground with the food wrapped in banana leaves and cooked through hot lava rocks. The hangi is buried in the ground and can have a dirty ashy taste.

I don't know about the lovo.

If invited, get involved from the beginning, takes a few hours but the boys usually have a few beers to support the cooking process!

Oh, man. Pig skin. Fuuuuuuuck!

20 minutes before the pig is done on the spit get a 330ml bottle of Tuborg shake the fck out of it, pop the cap and spray the pig to crisp the baby up
