Charcoal bbqing

ok guys
I’m thinking of getting a charcoal bbq,

Thinking a Weber Kettle compact
They are basic kettle but over 100$

But

Will that be a mistake

Being told I should get the Weber kettle classic
It has a deeper lid and some other shit

It’s $340 range?

I’m planing on low and slow bbq stuff
Pork ribs
Beef shorties
Brisket
That kind of thing.

So guys
Hit with what you use and give me some feedback

Dude i got kettle from bunnings with roatisarie and pizza stone for under $100 cooking on the charcoal and smoke no going back

I'd go with an off-set smoker, best of both worlds.

Avoid the compact. Too small which makes it to hard to control the heat for slow and low.

Honestly you don't need the best BBQ for it. If you're planning for slow then get a long BBQ. You can get a cheap one at Bunnings or Big W. Does the job well for cooking small batches.

Webber kettle works well too but only if you go the larger model.

This is a good all round one that I currently use. You can get the griller by itself then later on get the offset smoker.

One thing to keep in mind is that the thermostat is rubbish. Most coal thermostats are rubbish 'cause they're positioned wrong.

Just put coals down the right end of it, then put a water bath to the left of the coals and the meat above the water bath.

Then drill a small hole at grill level on the left (meat) side and put a little thermometer in the hole. I use the aldi digital meat thermometer. Works great for it and you can use it for meat too.

Size does matter
Only that I don’t want to spend money I like the clay egg types

Kamado Joe. Does it all. High temp sear. Low and slow smoke. Baked. Rotisserie. Pizzas. Grilling. Sucks you off too.

And this is the offset smoker addon that you can add later. It also works as a small griller. I have it as an offset smoker for the main unit but I also use it to cook wings while the meat is smoking in the main chamber
