There's nothing like homemade pizza straight outta the clay ovens. My Nonna made crazy calzone and pizza. It is shit that I can't find anywhere here that makes anything close to it.
One of my favourite pizzas to make is just thinly sliced potato with salt, pepper, olive oil and a few sprigs of rosemary. When you take it out of the oven throw on a few very thin slices of prosciutto and let it rest for a few minutes. Then serve it with some rocket on top and occasionally some shaved parmisen. There's nothing like homemade pizza straight outta the clay ovens.
Very simple toppings like garlic / oil and sprigs of rosemary or tomatoes, olive oil and basil with just a sprinkle of mozzarella.
Potato pizza was another nice one.
Unless you're an Italian with refined taste buds you couldn't possibly appreciate the simple flavours.
