There are sampling techniques to define the age of things. They teach you this stuff in high school.

Well according to a quick google search, carbon dating is very unreliable, the atmosphere, altitude and moisture in the air over the course of time can affect the results, and over a 10,000 year period the carbon-14 dating results can be out by up to 4000 years

40% margin of error, not very accurate imo, they can't tell what moisture was in the air etc 12,000 yrs ago, making their "guesses" as good as anybody elses.
