Banh mi are a pain to make at home, too many bits u have to get right. Bun cha are simple and you can smash heaps on the grill.

The trick - always, and I mean always - get the best and freshest fish sauce u can get. World of difference.

Yeah - although I usually stimp on the veg. Not a rabbit ffs. The nuoc sauce is easy, just mix it up. Noodles, just soak and drain. The rest, mix it up and grill.

Its only if u want to fck around with the veg it gets a bit more meh - but a good trick is a big grater and boom - that keeps the missus happy.

Meatball dunked in that sauce - can live on that.

Bro I couldn't even go into the water in the Sunshine Coast. It was brown from all the rain. Then when it finally looked like it was settling and turning blue, it rained again.

FFS give me Sydney beaches anyday.
