Flegg, Harold Matts and SG Ball isn't televised to hard to get a watch on talent. All I'm going off is weekly highlights.
NSW Cup a tad easier to get an idea of talent from.

Matts and SG Ball you only get try highlights, and defence is pretty weak (many tries are just through bad defence).

Fullback:
U16s Harold Matts - None
U18s SG Ball - None
Jersey Flegg - None
NSW Cup - Connelly Leumelu is playing fullback at the moment and had a shocker the other week. But he's a strong ball runner with decent pace and moves really nicely across the field. Not sure if first grade material though.

Centre:
U16s Harold Matts - Turoa Williams. 10 tries in 11 games. Goalkicker. Very light on his feet and knows how to find the line.
U18s SG Ball - Compton Fuatimau, Kurt Picken, Diego Bravo-Graham are all ones to watch.
Jersey Flegg - Isaiah Tass, Jake Averillo.
NSW Cup - None

Wing:
U16s Harold Matts - Anthony Baptista. 7 tries in 11 games. Like SG Ball hard to tell if good or just poor opposing defence. Quick player though.
U18s SG Ball - Tough call on this one. Vuki looks okay but being so young, and a comp with average defence hard to say.
Jersey Flegg - Blake Clayton (4 tries from 6 games), Frank Kuresa (3 tries from 6 games). Both tall, and quick wingers with very good footwork. Clayton is stupidly quick in open space, Kuresa not as quick but a powerful ball runner.
NSW Cup - Tui Katoa may be the next call up. Safe under the high ball with a good vertical leap. Quick in open space, with excellent footwork as well. Very powerful player. 3 tries from 6 games.
Connelly Leumelu is another one to keep an eye on. Strong ball runner with pace to burn of he gets in open space. Currently playing fullback in NSW Cup.

Halves:
U16s Harold Matts - Iverson Teo. 6 tries in 11 games. Very good footwork, quick on his feet, very illusive.
U18s SG Ball - Khaled Rajab. 5 tries in 11 Games.
Jersey Flegg - None really. Seve was promoted to NSW Cup the other week and had a shocker.
NSW Cup - Brandon Wakeham. Thinking player with a good long and short kicking game who takes the ball to the line.

Hooker:
U16s Harold Matts - None
U18s SG Ball - Issam Mehri scored 6 this season. Danny Ghantous I believe was playing hooker part of the season off the bench and looked sharp.
Jersey Flegg - Zac Hetherington despite only one try looks rather impressive. Crisp service and light on his feet.
NSW Cup - None

Backrow:

U18s SG Ball - Jackson Topine (already promoted to Flegg). 8 tries in 11 games and a goal kicker. Really nice line/hole runner, always in support, and has reasonable pace.

Props:
U16s Harold Matts - Solomone Saukuru. Any prop scoring 5 tries from < 11 games deserves a mention. Then again he's a massive lump of a lad so might just be dominating smaller/weaker kids.
U18s SG Ball - None
Jersey Flegg - None
NSW Cup - Jack Nelson and Kayne Kalache. Fairly solid players who whack hard in defence, make good metres with ball in hand, and are quite mobile for their size.

Jackson Topine from sgball, Javier pitavaao and Isiah Tass from flegg, katoa from nsw cup. The two centres from hm both dominated oppositions with aggressive running - hopefully they will develop height and not just width as they mature.
Does anyone know much about Mateo Tatola - I don't recall seeing him play but he has gone up the pecking order in 20s.

Williams and Baptista have not played 11 games, Williams has played 9 games and Baptista has played 5. Centre Tawa and Alamoti are standouts.

I realised that after I posted, because I didn't put in the stats in my spreadsheet for games played till I'd worked them all out.

Morgan Harper looks a good prospect as a right centre
Very good in attack, needs to learn how to tackle the bigger men of NSW Cup.

What happened to young gray at hooker ?
Like Harper. Good in attack, woeful in defence.

Harold Matt’s Lock #13 got Player of the year for 2019. Congrats Tusi-Alofa Aonga

And SG Ball obvious 2019 Captain Jackson Topine named Player of the year.

Gray plays #14, coming off the bench as hooker for Flegg

Mateo Tatola from Flegg has been out for the last 12 months due to injury from SG games last year. Older brother plays for Souths 1st grade. A small forward with plenty of power and determination.

Alamoti was excellent this year - running with the ball but also off the ball. Even more impressive given he has as you say another year at this level.
