Why? Because he has the best counter to the typical counter. Best way to deal with it is come forward hard. Hard to do against him because his fast ball is his 3 pace variations are probably 5 or 6 kms apart. And he turns the ball moderately. And is generally zeroing on your stumps.

Same reason why Lyon doesn't kill it around the wicket to lefties. Spins it too much. He uses pitch width (going wide) to try offset that.

Hit his foot - was thinking he didn't feel it as they were at the same time. No biggy anyway. Jadeja would have had him within a few balls. Carey is a technically limited but mentally sound batsman.
